  • 3-4 pieces boneless, skinless chicken breasts (about 1.5 lbs) Feel free to marinate for extra flavor.
  • 8 oz spaghetti Whole wheat spaghetti can be used for a healthier option.
  • 2 cups shredded sharp cheddar cheese Swap for another cheese if preferred.
  • 1 cup fresh bell peppers (chopped) Any preferred peppers can be used.
  • 1 can (10.5 oz) cream of chicken soup Can substitute with a vegan version if desired.
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper Adjust based on spice preference.
  • 1 tsp garlic powder
  • 1/4 cup green onions (sliced) For garnish before serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a large casserole dish.
  2. Cook the chicken in a large pot over medium heat, browning each side for about 6-7 minutes until fully cooked.
  3. Boil a pot of salted water and cook the spaghetti until al dente, about 8-10 minutes. Drain and set it aside.
  4. In a bowl, mix together the shredded chicken, cooked spaghetti, cream of chicken soup, chopped bell peppers, spices (paprika, cayenne, garlic powder), and half of the cheddar cheese until well combined.
Assembly and Baking
  1. Transfer the mixture into the greased casserole dish, then top with the remaining cheese.
  2. Bake in the oven for 25-30 minutes until the casserole is bubbly and golden brown.
  3. Allow it to rest for 5 minutes before garnishing with sliced green onions and serving.

Notes
