Preparation
  1. Preheat and prepare: Set your oven to 350°F (175°C). Lightly grease a large baking dish with butter or nonstick spray.
  2. Cook the spaghetti: Boil pasta until al dente, then drain and set aside. Don’t overcook—it will bake later.
  3. Sauté the vegetables: In a large skillet, heat olive oil and sauté onion, garlic, and bell peppers until soft and fragrant.
  4. Mix the sauce: Add the cream of chicken soup, diced tomatoes with chilies, cream cheese, and half of the shredded cheddar to the skillet. Stir until creamy and smooth.
  5. Add chicken and spices: Stir in shredded chicken, Cajun seasoning, salt, and pepper. Pour in chicken broth to loosen the sauce.
  6. Combine with pasta: Toss in the cooked spaghetti and coat evenly with the creamy, spicy mixture.
  7. Bake to perfection: Transfer everything into the prepared dish, top with the remaining cheese, and bake for 25–30 minutes until bubbly and golden.
