Spinach Dip in Bite-Sized Pinwheels

These delicious pinwheels are filled with a creamy spinach dip and wrapped in flaky puff pastry, making them a perfect appetizer for any occasion.

Ingredients
  

For the Filling
  • 1 bag frozen chopped spinach (10 oz), thawed and drained Squeeze out excess moisture
  • 1 block cream cheese (8 oz), softened Ensure it's softened for easy mixing
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • pinch red pepper flakes (optional for heat)
For the Pinwheels
  • 1 sheet puff pastry, thawed but still cold Can substitute with gluten-free puff pastry if needed.
  • 1 egg for brushing Beaten with a splash of water

Method
 

Preparation
  1. In a mixing bowl, combine softened cream cheese, grated Parmesan, mayonnaise, garlic powder, onion powder, and black pepper until well combined.
  2. Squeeze out any excess moisture from the thawed spinach and add it to the cream cheese mixture. Blend until uniform.
  3. On a lightly floured surface, roll out the puff pastry and spread the spinach mixture evenly over the pastry, leaving one long edge clear to help seal the log.
  4. Carefully roll the pastry like a jelly roll, keeping it tight and even. Wrap the log in plastic wrap and refrigerate for about 30 minutes.
Baking
  1. Preheat your oven to 400°F (200°C).
  2. Once chilled, slice the log into half-inch rounds and lay them on a baking sheet lined with parchment paper.
  3. Brush the tops of the pinwheels with the beaten egg.
  4. Bake for 15-20 minutes, or until puffed and golden brown.
