  • 1 cup fresh strawberries
  • 1 cup milk (dairy or non-dairy)
  • 3 tbsp chia seeds
  • 0.25 cup Greek yogurt
  • 1 tbsp honey or maple syrup
  • 0.5 tsp vanilla extract
  • 1 pinch salt (optional)

Method
 

  1. In a blender, add fresh strawberries, milk, yogurt, honey, and vanilla extract. Blend until completely smooth and creamy.
  2. Pour the blended mixture into a bowl or jar and stir in the chia seeds. Mix thoroughly to evenly distribute the seeds.
  3. Cover and refrigerate for at least 2 hours or overnight, allowing the mixture to thicken into a pudding-like texture.
  4. Stir again before serving to remove any clumps. Top with your favorite granola, sliced strawberries, or nuts.
  5. Optional: For a smoothie-like version, blend half the pudding again before serving for a quick drinkable breakfast.
