  • 2 cups grilled or roasted chicken, diced For a smoky flavor, use grilled chicken.
  • 1 cup sweet corn, grilled or canned Select a brand with minimal additives if using canned.
  • 1 large cucumber, diced Fresh cucumbers add crunch.
  • ½ cup red onion, finely chopped Adjust quantity to taste.
  • ½ cup mayonnaise Optional for lighter version, substitute with Greek yogurt.
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt To taste.
  • ½ teaspoon black pepper
  • optional crumbled feta cheese for garnish

Method
 

Preparation
  1. Prepare and cook the chicken on the grill until fully done, about 7-10 minutes.
  2. Mix the dressing with mayonnaise, Greek yogurt, lime juice, smoked paprika, salt, and black pepper.
  3. Combine all diced ingredients (chicken, corn, cucumber, red onion, cilantro) in a large bowl.
  4. Add the dressing to the bowl and stir gently for an even mix.
  5. Chill the salad for at least 15 minutes before serving.
