Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, melted butter, and sweetener for the crust. Press this mixture firmly into the bottom of a greased baking dish.
- Bake the crust for about 10-12 minutes or until golden.
Filling
- In another bowl, beat the softened cream cheese until smooth. Add in the eggs one at a time, mixing well after each.
- Stir in the vanilla extract and add the sweetener to your taste. Mix until everything is well combined.
- Pour the filling over the baked crust and spread it evenly.
- Bake again for 25-30 minutes until the edges are set and the center slightly jiggles.
- Once done, let it cool at room temperature, then refrigerate for several hours or overnight.
Serving
- Slice and serve with your favorite fruit topping if desired. Can be paired with fresh fruits, sugar-free chocolate sauce, or whipped cream.
