Ingredients
  

For the Shortbread Crust
  • 1/2 cup Unsalted Butter (room temperature)
  • 1/4 cup Powdered Sugar
  • 1 cup All-Purpose Flour
For the Lemon Curd Filling
  • 1/2 cup Lemon Juice (2-3 lemons) Freshly squeezed is preferred.
  • 1 tbsp Lemon Zest (finely grated)
  • 3 large Eggs (room temperature)
  • 1 1/2 cups Granulated Sugar
  • 1/2 cup All-Purpose Flour (sifted)
For Dusting
  • Powdered Sugar Powdered Sugar (for dusting)

Method
 

Preparation of Shortbread Crust
  1. Preheat your oven to 350°F (175°C).
  2. Cream together the room-temperature butter and powdered sugar until smooth.
  3. Gradually mix in the all-purpose flour until combined.
  4. Press the mixture into a lined baking dish and bake for about 20 minutes or until lightly golden.
Preparation of Lemon Curd Filling
  1. In a mixing bowl, whisk together the room-temperature eggs, granulated sugar, lemon juice, lemon zest, and sifted flour until well combined.
  2. Pour this lemon mixture over the baked crust.
  3. Return to the oven and bake for an additional 25-30 minutes or until the center is slightly firm and only slightly jiggly.
Finishing Touches
  1. Allow the bars to cool completely.
  2. Dust with powdered sugar before slicing into bars.
