Ingredients
  

For the crust
  • 1/2 cup Unsalted Butter (room temperature)
  • 1/4 cup Powdered Sugar
  • 1 cup All-Purpose Flour
For the lemon filling
  • 1/2 cup Lemon Juice (2-3 lemons) Fresh lemons recommended for best flavor
  • 1 tbsp Lemon Zest (finely grated) Fresh zest preferred
  • 3 large Eggs (room temperature)
  • 1 1/2 cups Granulated Sugar Can substitute with coconut sugar
  • 1/2 cup All-Purpose Flour (sifted)
  • Powdered Sugar (for dusting) For serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine unsalted butter, powdered sugar, and flour to create the crust mixture.
  3. Press the crust mixture firmly into the bottom of a greased baking dish.
Lemon Filling
  1. In another bowl, whisk together lemon juice, lemon zest, eggs, and granulated sugar until combined.
  2. Sift in the flour and stir until well mixed.
  3. Pour the lemon filling over the baked crust.
  4. Bake the bars in the preheated oven for 20-25 minutes or until the center jiggles slightly.
Cooling and Serving
  1. Remove from the oven and allow to cool completely in the baking dish.
  2. Dust with powdered sugar before cutting into squares and serving.
