Ingredients
  

  • 2 medium sweet potatoes, diced
  • 1 can (15 oz) butter beans, rinsed and drained
  • 2 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1 pinch cayenne pepper (optional)
  • to taste salt and black pepper
  • 1/4 cup cashews or pumpkin seeds
  • fresh parsley or cilantro for garnish

Method
 

  1. Dice sweet potatoes into 1-inch cubes for even roasting.
  2. Toss the cubes with olive oil, smoked paprika, garlic powder, cayenne, salt, and pepper. Spread them on a baking sheet.
  3. Roast in a preheated oven at 400°F (200°C) for 15 minutes.
  4. Rinse and drain butter beans, then toss with olive oil, salt, and pepper.
  5. Add beans to the baking sheet with sweet potatoes. Roast for 15–20 more minutes until potatoes are tender and beans are crisp.
  6. Remove from oven and stir in cashews or pumpkin seeds for crunch.
  7. Garnish with fresh herbs and serve warm.
