- Heat olive oil in a large skillet over medium high heat and add cubed chicken breast. Cook until golden on all sides, then remove and set aside.
- Lower heat to medium and melt butter in the skillet. Add onion and cook until soft. Stir in garlic, oregano, thyme, and paprika, cooking until fragrant.
- Pour in chicken broth and scrape the bottom of the pan to release flavor. Let the broth come to a gentle simmer.
- Stir in heavy cream and Parmesan cheese until smooth and slightly thickened. Season with salt and pepper.
- Return the chicken to the skillet and coat with the sauce. Simmer on low heat for five to seven minutes until chicken is cooked through and sauce has thickened.
- Garnish with fresh parsley and serve hot.
