Ingredients
  

  • 1.5 lbs chicken breasts, cubed
  • 2 tbsp olive oil
  • 0.5 cup unsalted butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp oregano
  • 1 tsp thyme
  • 0.5 tsp paprika
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 0.5 cup Parmesan cheese, grated
  • to taste salt and pepper
  • 1 tbsp fresh parsley, chopped (optional)

Method
 

  1. Heat olive oil in a large skillet over medium high heat and add cubed chicken breast. Cook until golden on all sides, then remove and set aside.
  2. Lower heat to medium and melt butter in the skillet. Add onion and cook until soft. Stir in garlic, oregano, thyme, and paprika, cooking until fragrant.
  3. Pour in chicken broth and scrape the bottom of the pan to release flavor. Let the broth come to a gentle simmer.
  4. Stir in heavy cream and Parmesan cheese until smooth and slightly thickened. Season with salt and pepper.
  5. Return the chicken to the skillet and coat with the sauce. Simmer on low heat for five to seven minutes until chicken is cooked through and sauce has thickened.
  6. Garnish with fresh parsley and serve hot.
