Ingredients
  

  • 1 ½ cups almond flour
  • 3 tbsp melted butter
  • 2 tbsp monk fruit sweetener granular
  • 16 oz full-fat cream cheese
  • cup powdered erythritol
  • ¼ cup key lime juice fresh or bottled
  • 1 tsp lime zest
  • ½ cup heavy whipping cream
  • Optional: 1 tbsp unflavored gelatin

Method
 

  1. 1. Mix almond flour, butter, and sweetener. Press into pan.
  2. 2. Chill crust while preparing filling.
  3. 3. Beat cream cheese until smooth. Add erythritol, lime juice, and zest.
  4. 4. Whip in heavy cream until fluffy.
  5. 5. Pour filling into crust. Smooth top.
  6. 6. Chill for at least 4 hours or overnight.
  7. 7. Top with whipped cream, lime slices, or coconut flakes.
