  • 1 pound ground turkey
  • 1 can (15 oz) pumpkin puree
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • to taste salt and pepper
  • 2 cups chicken broth
  • Olive oil Olive oil for sautéing

Method
 

Preparation
  1. In a large pot over medium heat, heat a drizzle of olive oil.
  2. Add chopped onions and minced garlic, cooking until softened and fragrant.
  3. Introduce the ground turkey to the pot and cook until browned, breaking it apart as it cooks.
  4. Once your turkey is nicely browned, stir in chili powder, cumin, salt, and pepper.
  5. Add in the pumpkin puree, diced tomatoes, and rinsed black beans, followed by chicken broth.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-30 minutes.
  7. Serve warm in bowls, topped with your favorite toppings.
