  • 1.5 cups raw pecans Can be substituted with walnuts.
  • 15 pieces medjool dates, pitted Use the freshest dates for best texture.
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup mini chocolate chips Feel free to swap with other types of chocolate if desired.

  1. Place the pecans, medjool dates, vanilla extract, and salt in the bowl of a food processor.
  2. Blend until the mixture is crumbled and sticky, resembling a dough that holds together when pinched.
  3. If the texture is too dry, add 1/2 to 1 tablespoon of melted coconut oil or a splash of water and process again until it comes together.
  4. Toss in the chocolate chips and pulse a few times until evenly distributed.
  5. Use a mini cookie scoop or a tablespoon to portion out the mixture into 12-15 rounds.
  6. Roll each portion into a ball and enjoy your homemade Turtle Energy Balls!
