Vampire Bite Red Velvet Cheesecake

Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, room temperature
  • 1 cup granulated sugar (for filling)
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1 tbsp unsweetened cocoa powder
  • 1–2 tbsp red food coloring
  • as needed whipped cream, for topping
  • as needed raspberry sauce or red gel icing, for decoration

Method
 

  1. Preheat oven to 325°F. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into a 9-inch springform pan and bake for 8–10 minutes.
  2. Beat cream cheese and 1 cup sugar until creamy. Add eggs one at a time, mixing just until combined.
  3. Stir in sour cream, vanilla, cocoa powder, and red food coloring until smooth and evenly colored.
  4. Pour filling into crust. Bake for 50–60 minutes until edges are set and center slightly jiggles.
  5. Let cool completely, then refrigerate for at least 4 hours or overnight.
  6. Top with whipped cream and decorate with raspberry sauce or red gel icing to create vampire bite marks.

Notes
