Ingredients
  

  • cups bread flour
  • tsp active dry yeast
  • 1 cup warm milk
  • ¼ cup granulated sugar
  • 1 vanilla bean (or 2 tsp pure vanilla extract)
  • 2 large eggs
  • ¼ cup unsalted butter, melted
  • oil for frying (vegetable or canola)
  • powdered sugar, for dusting

Method
 

  1. In a small bowl, combine warm milk, 1 tsp of sugar, and yeast. Let sit for 10 minutes until frothy.
  2. In a large bowl, mix bread flour, remaining sugar, and a pinch of salt. Add eggs, melted butter, yeast mixture, and vanilla seeds. Mix until a dough forms.
  3. Knead the dough for 10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1–2 hours until doubled.
  4. Roll out dough to ½-inch thickness. Cut into small squares using a dough cutter or knife.
  5. Heat oil in a deep pan to 350°F. Fry a few beignets at a time, flipping once, until golden on both sides. Drain on paper towels.
  6. Dust generously with powdered sugar while still warm. Serve immediately.
