Dressing

Method
 

Preparation
  1. In a large mixing bowl, toss together the cubed watermelon, diced cucumber, thinly sliced red onion, and chopped mint leaves.
  2. In a smaller bowl, combine olive oil, lime juice, salt, and pepper, whisking until well blended.
  3. Pour the dressing over the salad mixture and gently toss until the ingredients are evenly coated.
  4. Serve right away, or for added coolness, refrigerate until it's time to enjoy.
