- Preheat oven to 325°F. Mix crushed cookies and melted butter in a bowl. Press into a springform pan to form the crust. Bake for 10 minutes and cool.
- In a large bowl, beat softened cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, then mix in vanilla extract and sour cream. Blend until just combined.
- Divide batter evenly into three bowls. Tint each with green, purple, or orange gel food coloring.
- Spoon dollops of each colored batter onto the crust in layers. Swirl gently with a knife or skewer for a magical effect.
- Bake for 45–55 minutes until edges are set and center jiggles slightly. Let cool gradually at room temp.
- Refrigerate at least 4 hours or overnight before slicing. Decorate with spooky toppings as desired.
