Ingredients
  

Pasta and dressing
  • 1 cup orzo pasta Boil until tender and cool completely.
  • 1/4 cup olive oil For dressing.
  • 2 pieces lemons Juiced and zested for dressing.
Vegetables and cheese
  • 1 cup cherry tomatoes Halved.
  • 1/2 piece cucumber Diced.
  • 1/4 piece red onion Finely chopped.
  • 1/2 cup feta cheese Crumbled.
  • 1/4 cup fresh parsley Chopped.
Seasoning
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Boil the orzo pasta according to the package instructions, approximately 8-10 minutes.
  2. Drain the orzo and allow it to cool to room temperature.
  3. In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper until well blended.
Combining Ingredients
  1. Once the orzo is cooled, add it to the mixing bowl along with cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
  2. Gently toss the mixture until all ingredients are well combined and coated.
  3. Taste and adjust seasoning if necessary.
Serving
  1. Serve immediately, or chill in the refrigerator before serving.
